    Description

    This is a beautiful looking salad and oh so healthy!

    Ingredients

    • 1/2 cup Feta cheese
    • 1 (6 oz ) container spring mix greens
    • 1 tomato, diced
    • 1 bottle Greek vinaigrette
    • 1 cucumber, peeled and sliced
    • 1 head romaine lettuce, chopped
    • 1/4 red onion, thinly sliced
    • 1/2 jar pepperoncini peppers
    • 1/2 ( 11 oz ) jar roasted red peppers, sliced
    • 1 jar Kalamata olives, pitted

    Directions

    1. Put spring mix greens and sliced romaine lettuce in bowl and mix together.
    2. Top with: sliced roasted red peppers, thin sliced red onions, Kalamata olives, pepperoncini peppers, diced fresh tomatoes and peeled and thinly sliced cucumber.
    3. Sprinkle with Feta cheese.
    4. Top with a Greek vinaigrette.
