    Description

    This is a delicious way to eat squash!

    Ingredients

    • 1/2 onion, diced
    • 1 ( 1 lb ) spaghetti squash
    • 1/2 orange bell pepper, diced
    • 1 tsp ground Italian seasoning
    • 1 tsp minced garlic
    • 1/8 tsp salt
    • 1/8 tsp ground black pepper
    • 1 small zucchini squash, diced
    • 1 tomato, diced
    • 1/4 cup Parmesan cheese, freshly grated

    Directions

    1. Preheat oven to 350 degrees.
    2. Place squash in microwave for 5 minutes to soften enough to make it easier to cut in half. Take out; cut in half and scoop out seeds.
    3. Place back in microwave for another 6 minutes. Remove, and using a fork scrape out flesh. It will look like spaghetti. Save the shell.
    4. Dice the following: tomato, 1/2 onion, orange bell pepper, zucchini squash. Add garlic, Italian seasoning, salt and pepper. Mix with squash and put back in shell.
    5. Bake for 1 hour.
    6. Sprinkle fresh grated Parmesan cheese over top.
