Sylvia's Hoppin' John with Blackeye Peas, Onions & Jalapenos

Queen of soul food. With blackeye peas, tomatoes, onions & jalapenos. Great side dish, soup mix or over rice! Heart healthy. No cholesterol. Down South, we've been cookin' up pots of Hoppin' John ever since I can remember. Why it's called that, I'm not sure. I've been told it goes back to the days of slavery, and I've heard that the word hoppings once meant feasts. I make my Hoppin' John by cooking up a pot of black eye peas and adding tomatoes, onions, spices and jalapeno peppers for extra punch and then serve it over pipin' hot rice. It's a must at every picnic, and family gathering and, of course, an absolute necessity to eat at New Year's for good luck. Now, with my dee-licous blend, you can have some whenever you want.
