    These are great for kids or as an appetizer or side dish!


    • Non-stick cooking spray
    • 1/2 cup bread crumbs
    • 1/2 cup grape tomatoes, quartered
    • 6 oz elbow pasta
    • 1 cup shredded Cheddar cheese
    • 1/4 tsp kosher salt
    • 1/8 tsp freshly ground pepper
    • 1/2 cup chopped broccoli, blanched


    1. Preheat the oven to 375 degrees.
    2. Spray 6 cups of 12-cup muffin pan with cooking spray. Coat inside of each muffin cup with bread crumbs, reserving any excess.
    3. Bring medium pot of salted water to boil over high heat. Add pasta and cook until al dente; stirring 8-10 min. Drain pasta, add back to pot, and stir in Cheddar cheese. Season with salt and pepper to taste.
    4. Spoon pasta mixture into muffin cups, filling almost to top and pressing gently to set. Top each cup with diced tomatoes and broccoli. Sprinkle pinch of remaining bread crumbs onto each.
